Ingredients to make Watermelon Sorbet:
- 4 cups of watermelon (preferably seedless), cubed
- 1 cup sugar (adjust to taste)
- 1/4 cup fresh lime juice
- 1/4 cup cold water
- 28g unflavoured gelatine
- 1 cup chilled heavy cream
- Optional: Mint leaves for garnish
Now to how make Watermelon Sorbet (Method):
Prepare the Watermelon: Cut the watermelon into cubes and remove any seeds if necessary.
Combine Ingredients: In a bowl, mix together the watermelon cubes, sugar, and lime juice. Cover with plastic wrap and refrigerate for 30 minutes to allow flavours to meld.
After chilling, place the watermelon mixture in a blender or food processor and blend until smooth. Pour the puree back into the bowl.
Prepare the Gelatine Syrup:
Sprinkle the gelatine over the cold water in a saucepan and let it sit for a minute to bloom.
Place the saucepan over low heat, stirring for about 2 minutes until the gelatine fully dissolves.
Combine and Whip:
Pour the gelatine mixture into the watermelon puree. Add the chilled heavy cream and beat with an electric hand mixer on medium speed until the mixture is fluffy and well combined.
Freeze:
Pour the mixture into a shallow, freezer-safe dish. Freeze for about 1 hour, then stir with a fork to break up any ice crystals.
Repeat this stirring process every 30 minutes for the next 2-3 hours, until you achieve a smooth, sorbet-like texture.
Serve: Scoop the sorbet into bowls and garnish with mint leaves, if desired.
Enjoy immediately or store in an airtight container in the freezer for later.
